Over the summer months, cider has been a staple in our fridge to keep cool. It’s also Jay’s favourite beverage. Somersby Cider is a refreshingly crisp apple cider made from fermented apple juice and natural apple flavouring. No artificial sweeteners, flavours or colourings. It’s my favourite cider I’ve tried this summer and our fridge is filled with it! Jay and I have been having picnics regularly over summer to enjoy this great weather. I decided to make a delicious loaf that could be taken with us to enjoy on our next picnic with Jay’s favourite beverage – cider and created this recipe which includes the cider. It’s a beautiful loaf cake that has a slight caramel apple taste.
Jay and I were so in love with this loaf, we even had some the same day after dinner. We sliced a piece, cut in half and stacked it on top of each other. We warmed it up in the microwave before pouring over some cream and dug in. It was so delicious and will be cooked frequently in our kitchen as the weather gets cooler.
